Co-founder Jess Goldwater has always loved seafood but struggled to find fish that was simply prepared, without a lot of fancy sauces or preparation. During a trip to Maui 15 years ago, he discovered local fish stands, and learned how good fresh seafood, simply prepared, could be. This discovery triggered a passion, and he made it his goal to someday open a casual seafood restaurant in the Northwest. But it wasn’t until recently that this goal became reality. Moving to Bainbridge three years ago allowed Jess to be introduced to his now business partner, Chef Tad Mitsui of Heyday Farm. The two became friends, sharing a common passion for great food, prepared in a way that lets the ingredients shine. Several meals and bottles of wine later, a plan was hatched to bring a new seafood concept to the island.
